Scientific article on alcohol reduction published on Vignevini (December edition)
A scientific article is available, published by professor Roberto Ferrarini in cooperation with his research staff and with Mr.Enrico Bocca (Enologica Vason) and Mr.Alberto Stassi (Juclas).
The title "Alcohol reduction, the most performing techniques from a qualitative point of view" clearly highlights the purpose of this research project.
The reduction of wine percent alcohol without compromising its quality and territorial identity, is a possible challenge thanks to the new "gaseous membrane" techniques.
An evolution that can make overcome the current quarrel inside OIV for the authorization of this practice.
This research has led to the definition of two industrial patents and to the realization of a plant already available for the Countries where alcohol reduction practice is allowed.
