Alchemy I and Alchemy II: innovative yeast blends, for wines’ aromatic improvement

Alchemy, yeast blends thought for a full aromatic expression, is an idea derived from the scientific collaboration between Anchor Yeasts and the Australian Institute. The article is about basic scientific issues and then it refers to Vason Group’s trials, carried out in 37 Italian cellars at different latitudes; this experimentation’s purpose was to assess these blends’ attitude to improve the aromatic components of many varieties typical of the Italian territory. Varieties taken into examination are 13.
