Limiting the production of acetaldehyde?

Published an article identifying in the activator V Starter Premium®, the remarkable capacity of limiting the production of acetaldehyde in different technological conditions. Positive results from the sensory point of view for the primary fermentations and foam-taking (Champagne) methods.

VQ n.3 of April 2009 published an article by Vason Group regarding the study of acetaldehyde production in the course of primary fermentations and foam-taking (Champagne) methods. The experimentation takes in consideration the presence of SO2 and copper, the traditional parameters hampering the fermentation process. It also highlights the results that can be obtained through the employment of V Starter Premium® as a mean for limiting its production.
