Process of Precision Fermentation Before the choice of yeast: PFP
An extensive experimentation run by Vason Group’s R & D Dept., led to the view that a successful fermentation is not only the result of choosing the best yeast and timely dosage of the most suitable nutrients. It was studied what yeasts are able to metabolize in the various stages and all the current knowledge has been condensed in the Precision Fermentation Process - PFP. PFP is an integrated process that includes both automatic plants and exclusive and reliable verification procedures able to precisely define what action to perform in various steps of fermentation. Every step of the Process is followed by a verification system developed and refined by Vason Group to allow winemaker to monitor all stages of fermentation. Thus we introduce a new concept in the cellar: to run only the necessary actions through a series of operations aimed at controlling the production of unwanted secondary fermentation products and to ensure reliable fermentations even in extreme conditions. Spearhead of the process is EASYFERM ®: the first system to optimize the stages of rehydration through the automatic management of water temperature, the amount of sugars, nutrients, oxygen, the duration of each stage. In the PFP Nucleocounter was introduced, an innovative verification system that is integral part of this Procedure. The systems described have been engineered, refined and adapted to the production needs of the market by Professor Roberto Ferrarini, now professor of Oenology at the University of Verona, who concerning this subject published numerous studies and trials available by contacting the company's technical staff.
