VQ n.4 of May 2008 published the studies that are at the basis of the innovative rehydration procedures for dry yeasts.
The first article "Rehydration: an in-depth study" refers to the single factors that must be carefully managed to make rehydration a yeast enhancement tool. Myths to dispel are also taken into consideration.
The second one entitled "An ad hoc plant for yeasts rehydration" reports the comments about the extraordinary vitality results of inoculated cells after a correct rehydration carried out through the automatic plant Easyferm®.
Easyferm® autonomously controls and manages temperature, oxygen, nutrients, time and agitation of the rehydration process.
