On last 26th November 2010 at the Klass Hotel in Castelfidardo (AN), the 1° National Congress on alcohol removal of wines took place. This informative seminary called "The new frontiers: low alcohol content wines" was organized by the Istituto Marchigiano di Tutela Vini in collaboration with Centro Italiano di Analisi Sensoriale. The event was sponsored by Marche Region, by the Ministero delle Politiche Agricole Alimentari e Forestali and by the Organisation Internationale de la Vigne et du Vin (O.I.V.) whose General Director, Mr. Federico Castellucci, was present as speaker.
The Congress has developed the different aspects of this issue from the applicative and marketing point of view with special care to the aspects linked to alcohol effects on the aromatic perception; in this case also the typology and intensity of the treatments have been considered able to keep wine s identity for the product treated.
Prof. Roberto Ferrarini, with whom Vason Group has been cooperating for many years, has presented the current technologies for the reduction of wines alcohol content. The survey entitled "Alcohol removal techniques of wines and first results of the current research", has also put a special attention on the incidence of the different techniques while respecting wines territorial identity.
Among the machines used in the oenological world, also the "contactor" system has been described, laying at the basis of Mastermind® Remove, in which alcohol removal treatment is performed, according to Juclas s.r.l. consolidated experience, respecting the product s quality and complexity. This means that the unit works at room temperature, with a minimal energetic consumption, and with an accurate control of the quantity of extracted alcohol. At the same moment a tasting desk has been set up where wines treated with Mastermind® Remove technique have been tasted. Preference results about the tasting set up will be available in a short time.
We remind you that 2° alcohol removal is currently allowed by the law. The new CE Regulation (CE) N. 606/2009 dated 10 July 2009 deals about this issue concerning vine and wine products, the oenological practices and relative restrictions.
