In order to tackle the climate change, in the last 10 years some important aims have been established (Kyoto protocol and the several related programs) with the goal of reducing the levels of GHG (greenhouse gas) worldwide. Il “Carbon Footprint” is the sum of the emissions of CO2 and other GHG (greenhouse gas) associated to a product/service/process along the whole supply chain characterizing it (JRC,2007). In the 2009 Enologica Vason, in line with its own goals of improvement of environmental performance and on a voluntary basis, has commissioned to Studio Qualità e Ambiente sas, the support to develop the operational tools which are necessary for the implementation of this system. According to this study in 2008 the carbon footprint of the analyzed products has been approximately: 0.85 kg CO2eq / kg of yeast, 0.42 kg CO2eq / kg of bentonite, 1.14 kg CO2eq / kg of enzymes and 2.14 kg CO2eq / kg of pea protein (Fitoproteina P). The company intends to extend the operational scope through a next revision of the system including both other operational phases and other products (e.g. tannins), currently excluded due to lack of data. Eco-sustainability is a recurrent and very sensitive issue (every day the media talk about global warming) and 2009 is considered the critical year to give a remarkable change to the trend that has been hitting the world for many decades. Enologica Vason today is the first company of the oenological sector that has got the UNI ISO 14064-1 certification, showing once again that it is innovative and ahead of times even concerning issues not directly related to its business, but with the full awareness to contribute to the sustainable development of an economic productive system of which it is integral part: the vine and wine sector.
