New product is Viniflora® CiNe, a colture of Oenoccocus oeni that, while allowing malolactic fermentation and not being able to use citric acid, doesn't produce the typical "buttered" aromas. Viniflora® CiNe is therefore suitable for the production of wines in which a biological reduction of acidity is welcome but at the same time they are fully expressed in their aromatic and fruity varietal potential.
Viniflora® CH11 - for wines to be kept varietal and fruity
Viniflora® Oenos - the most widespread Viniflora® CH35 - ideal for white and rosè wines Viniflora® CH16 - alcohol-tolerant Viniflora® CH11 - for wines with low pH
The important scientific-operational partnership between Enologica Vason and Christian Hansen has been going on since 2008: Christian Hansen is the worldwide leading company in the production of microbic starters for the food industry. Viniflora® range is well known about its capacity in meeting the several needs to carry on safe malolactic fermentations, even under difficult circumstances.
The 5 Oenococcus oeni strains are certified as “non producers” of biogenic amines. They are obtained according to an exclusive patent, as a result of the centennial experience in the production of microbic starters, making them fit for their employment through DIRECT INOCULUM, essential element for the malolactic fermentation management. Every single batch is controlled according to the new system MACC (Malic Acid Conversion) to ensure the product’s vitality once it is inoculated in the wine.
Specific applications on the different kinds of wines and on the yeast-bacterium biologic synergy are available even in co-inoculum, through Enologica Vason’s technical service.
The official activator by Christian Hansen for malolactic fermentation is BACTIV AID 2.0 which starting from 2010 is available with ALLERGEN FREE composition.
