Spontaneous fermentations are able to produce wines with an incredible aromatic complexity.
The different yeasts, each one from its side, give particular contributions to the aromatic bouquet, but this result is not obtained with certainty, because there is no control of the process.
Chr Hansen developed the use of non-Saccharomyces yeast strains in unique blends with Saccharomyces able to highlight the best from your wines, by increasing smoothness and body to the palate, giving elegance and a wild character to the aromatic complexity.
This way there’s the possibility to reintroduce the advantages of the non-Saccharomyces yeasts avoiding the usual risks connected with a natural fermentation, not inoculated.
The strains are selected from isolated collections of Kluyveromyces thermotolerans and Torulaspora delbrueckii which, in association with S.cerevisiae at different percentages, represent 4 products with Vinflora ® brand, each one able to differ your wines: Rhythm.nsac, Melody.nsac, Symphony.nsac e Harmony.nsac.
There’s also Prelude.nsac, a Torulaspora delbrueckii in purity, to be enhanced by appropriate procedures of sequential inoculation.
Vason Group technical service can address the choice of some of these interesting innovations about alcoholic fermentation, depending on the oenological results required.
