Powdered concentrated enzyme preparation for the clarification of white musts and young wines.

Zimaclar® is an enzyme preparation with very high pectolytic activity. Its formulation has been designed in order to allow the clarification of white musts and subsequent filtration procedures.

Its use allows:

  • the viscosity of the medium to be reduced
  • the rapid separation of solids
  • optimal lees compaction
  • the yield of first-pressing must to be increased
  • filterability to be significantly improved
