Powdered concentrated enzyme preparation for the clarification of white musts and young wines.
Zimaclar® is an enzyme preparation with very high pectolytic activity. Its formulation has been designed in order to allow the clarification of white musts and subsequent filtration procedures.
Its use allows:
- the viscosity of the medium to be reduced
- the rapid separation of solids
- optimal lees compaction
- the yield of first-pressing must to be increased
- filterability to be significantly improved
