Zimaclar® pH3

Powdered enzyme preparation that is strongly active at low pH, designed for the clarification of white musts and young wines.

Zimaclar®pH 3 is a powdered enzyme preparation. It is an acidic pectinase intended for oenological use, developed in order to improve must clarification, the product’s filterability at each stage of vinification and to increase yields during pressing.

Specifically, Zimaclar®pH 3 has been designed to be used on early-harvested musts, musts for obtaining sparkling wine bases and low pH musts.
