V MALO CLEAR
V MALO CLEAR is a specific preparation based on yeast hulls, ideal for preventing difficulties in the management of malolactic fermentation.
Through its adsorbent capacity, V MALO CLEAR removes heavy metals and medium-chain fatty acids that, if present at certain concentrations, are toxic to bacteria.
These specific yeast cell walls have been derived under optimal metabolic conditions, resulting in unique properties that exhibit strong affinity towards lipophilic compounds, particularly fatty acids with 6, 8, and 10 carbon atoms (hexanoic, octanoic, and decanoic acid) and their esters.
These substances are produced naturally by the yeast metabolism, but are generated to a greater extent when the yeast experiences stressful fermentation conditions.
V MALO CLEAR can also adsorb certain fungicide or antibacterial residues used in vineyards, whose active ingredients could hinder the viability of malolactic bacteria if still present at proper concentrations.
