VIW® SUPERAGE

VIW® SUPERAGE is a strain of Saccharomyces cerevisiae perfect for crafting wines of exceptional class, smoothness, and vibrant aromatic depth.
It enhances the palate's softness and presence intriguingly, particularly when kept on lees after the completion of alcoholic fermentation.
During the 'sur lies' period, it has a tendency to release significant levels of glutathione in its original form, creating a highly stable redox system that helps preserve its freshness characteristics over an extended period.
Capable of vinifying whites, rosés, and reds, it leads clean fermentations in temperatures ranging from 14 to 28°C, allowing the emergence of appealing aromas defined by a distinctly sweet fruity profile and fresh floral notes.
It exhibits moderate resistance to copper and osmotic pressures, which enables it to achieve an alcohol content of up to 17°Alk.
A noteworthy technological aspect is its resilience to the presence of copper traces in musts.
VIW® SUPERAGE also exhibits excellent resistance to sulphur dioxide and a slight demalicating action.
