Calcium in wine

If greater than certain concentrations calcium can precipitate forming characteristic whitish sediments. A solution is provided by a technique that has been approved as an authorised oenological treatment: membrane tartaric stabilisation (Ju.Cla.S electrodialysis: Reg. CE 1493/99 Annex IV, Article 4 (B)).

In addition, there is the possibility to reduce the calcium in solution with the addition of Cristallite® Special. In the product’s technical datasheet there are detailed instructions on the product’s proper use.
