VIW® SHIELD MP

Selected Non-Saccharomyces yeast for enological use.
VIW® SHIELD MP is excellent for bioprotection as well as for the first steps of the vinification.
VIW SHIELD MP predominates over the native microflora, and it is helps to avoid oxidation and to enhance aromas.
It is not able to yield a good fermentation but its purpose is to enhance terpenic and thiolic precursors of the juice and to prevent the oxidative processes.
VIW® SHIELD MP must be followed by an inoculation of a Saccahromyces cerevisiae in order to perform the alcoholic fermentation of the juice.
